The family has cultivated coffee on there Andean slopes for many years, combining traditional knowledge with innovation to produce fully traceable, high quality coffee.\u003c\/p\u003e\n\u003cp style=\"text-align: center;\"\u003eThe farm spans 50 hectares, with 28 hectares dedicated to coffee production across 5 distinct micro-lots. The steep terrain makes mechanisation impossible, so all the coffee is selectively hand-picked. To improve efficiency and protect cherry quality, the family has installed an aerial cable car system that transports freshly harvested cherries and farm supplies between the hillside plots and the on-farm processing station. \u003c\/p\u003e\n\u003cdiv style=\"text-align: center;\"\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003eAbout processing: \u003c\/strong\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThrough multiple harvest passes, ripe cherries are hand-picked. They undergo flotation sorting to remove under-ripe, damaged and low-density cherries.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eCherries are then pulped using a mechanical disc pulper before fermenting in covered concrete tanks for approximately 12 hours. \u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eDrying is adapted to weather conditions using a combination of sun-drying patios, parabolic solar dryers and multi-level African-style raised beds.
